MAXIMUS RED

GRAPE: 50% CABERNET SAUVIGNON 50% MERLOT
REGION: Puglia (Italy)

Harvested in the early days of September.
The bunch is sparse, not tight with grapes, sugars are very concentrated.
The grapes were de-stemmed and vinified using new methods that guarantee a very gentle pressing, Maceration took place in winery horizontal rotary thermo regulated.
During this period, the wine completed its Alcoholic fermentation at a temperature not exceeding 20°C. Was then introduced in 225 liter French barriques (Allier Troncais) where it completed malolactic fermentation and aged for up to 6 months.

TASTING NOTES: Red cardinal has a very intense aroma and long persistence. The palate is powerful, harmonious strong complexity well rounded and full body structured.

ALCOHOL: 13.5%

MAXIMUS WHITE

GRAPE: 50% Chardonnay 50% Fiano
SOIL: Deep and Sandy

 Made from grapes selected Fiano & Chardonnay harvested in the month of August.
Its aromas are the result of each grape type cold maceration at 4°C for 24 hours (separately) performed immediately after de-stemming, and alcoholic fermentation at 15°C for about 10 days. Then blended the two varietals settle for several days in the stainless-steel tanks before release.

TASTING NOTES: straw-colored gold intense, beautiful luminosity and brilliance.

Its bouquet offers a sublime combination of peach, apple, orange, Mediterranean maquis, and velvety smooth finish.

TASTING NOTES: Medium-bodied, with a high-toned profile of white and black cherry, wild herb, black licorice string and Kalamata olive. Well-balanced and mouthwatering, with refined tannins showing on the finish. Drink now through 2020. 40,000 cases made. –AN
